- In a medium-sized bowl, mash the ripe banana with a fork until it's smooth and free of lumps. Add the two eggs and the glutinous rice flour to the bowl, and whisk all the ingredients together until you have a smooth batter.
- Preheat your waffle maker and lightly oil it to prevent sticking. If you prefer pancakes, you can use a hot skillet instead.
- Pour the batter into the waffle maker, making sure to leave some space for expansion. Close the waffle maker and allow the magic to happen. Once the waffles turn a beautiful golden brown, they are ready to be taken out.
- For the berry compote, take a small microwaveable bowl and add the frozen berries to it. Microwave the berries in 30-second intervals until they become hot and slightly mushy. This usually takes about 1 to 1.5 minutes. Now, stir in the maple syrup or agave and chia seeds, mixing everything together to create a delightful berry compote.
- To serve, place the mochi waffles on a plate, and generously spoon the warm berry compote over them. For an extra protein boost and creamy goodness, add a dollop of plain Greek yogurt on top. Finally, sprinkle some cocoa nibs over the waffles for that irresistible touch of chocolate and crunch.
