Spinach and Egg White Rice Paper Wrap
Packed with the health benefits of spinach and egg whites, this easy recipe is perfect for using up leftover egg whites and can be customized with your favourite sausages or smoked tofu.

- 1 rice paper
- 2 egg whites Leftover from Day 3 Recipe!
- 1 cup spinach leaves wilt them in a skillet first with a tbsp of water
- 1 sausage cut into slices
- 1/2 block smoked tofu cut into strips or cubes
- 0.5-1 tbsp chili oil use your favourite brand
- 2 tbsp smashed avocado
Using a non-stick skillet, turn the heat to medium low and do not put oil on it!
Place one sheet of rice paper on the pan and quickly spread your chili oil on all around.
Add in your egg whites and spread it close to the edge, though keeping everything inside the rice paper (not spilling over the edge).
Once the egg white is 50% set, spread your smashed avocado all around half of the egg white wrap
Then add your other toppings (smoked tofu, sausages, wilted spinach) all on the same half and fold it over like an omelette.
Turn off the heat and set aside on a plate.
Once the rice paper wrap has cooled for 1-2 minutes, fold it again into a quarter and enjoy!

For the best taste, use high-quality chili oil from brands like Lao Gan Ma, Holy Duck, or Simply Homayd.
Get creative with flavorful ingredients! Consider adding your favorite sausages or smoked tofu, like the Siwin Japanese style mozzarella sausages from Costco or 'Maple Soy' or 'Just Smoke' smoked tofu from Oome.
