In a non-stick skillet, heat up the tortilla until it is lightly brown on both sides.
Set tortilla aside on a plate. Without oil, add crumbled feta to the pan in a circle, making sure to leave a bit of room in the middle of the egg. The circumference of the feta should be as wide as the size of your tortilla.
Crack and egg in the middle and let the feta crisp up. Add a bit of oil around the edges to get the cheese nice and crispy.
Once the egg whites are more settled, add in chopped grape tomatoes, and green onions.
Once feta is nice and crispy and egg whites are no longer translucent, turn off the heat and remove the feta egg. Place it on top of the tortilla.
Fold the tortilla like a taco and eat as is! Pop the yolk for maximum sauciness and enjoy!
Notes
Variation #2: Hot Honey!Instead of cherry tomatoes and green onions, add a squirt of honey and sprinkle togarashi spice (Japanese spice seasoning) or chili flakes. Enjoy!
