While it’s more of a one-pan (not one-pot) recipe, these viral feta crispy eggs are an absolute game-changer in terms of flavour and simplicity. In just 5 minutes, you can whip up a delicious and comforting breakfast dish!

- Crispiness: most people know to put feta eggs in Greek Salad and to eat it cold, but who knew pan frying feta would give it such a crispy and golden crust?
- Flavour: because the feta is briny and salty already, you don’t need to add any additional seasoning like salt or pepper
- Versatility: there are so many variations of this recipe you can try, and I’ll be showing you 2 ways – but feel free to personalize it whichever way you like!

Viral Crispy Feta Fried Eggs
- 1 non-stick pan
- 1 egg
- 1 medium sized wheat tortilla
- 2 tbsp crumbled feta cheese
- Few grape tomatoes, chopped
- sprinkle green onions, chopped
- 1 tbsp neutral oil I used EVOO
- In a non-stick skillet, heat up the tortilla until it is lightly brown on both sides.
- Set tortilla aside on a plate. Without oil, add crumbled feta to the pan in a circle, making sure to leave a bit of room in the middle of the egg. The circumference of the feta should be as wide as the size of your tortilla.
- Crack and egg in the middle and let the feta crisp up. Add a bit of oil around the edges to get the cheese nice and crispy.
- Once the egg whites are more settled, add in chopped grape tomatoes, and green onions.
- Once feta is nice and crispy and egg whites are no longer translucent, turn off the heat and remove the feta egg. Place it on top of the tortilla.
- Fold the tortilla like a taco and eat as is! Pop the yolk for maximum sauciness and enjoy!
