AND JUST LIKE THAT.... It’s been 2 WHOLE YEARS ✌🏻

I normally share a lot of obstacles and troubles I’m facing as I navigate this crazy world of entrepreneurship, and I don’t often talk about my wins. I think it’s cause I want to stay humble, refrain from bragging, and honestly - sharing insecurities is often more relatable!! 😅

However! I have had some wins over the last 2 years that I’ve been quite proud of so I do want to celebrate them even if it’s in a small little capacity ☺️ So don’t at me if you don’t like this and pls just scroll past this if you want 😆

Here it goes...✨

⏺ I grew my accounts by over 200k followers this past year 🙇🏻‍♂️
⏺ My dream to be paid to go on branded media trips are now coming to fruition which is something I never thought would happen 🙏
⏺ I RARELY have Zoom meetings anymore and I feel SO FREE waking up every morning🤩
⏺ I also LOVE that I no longer have to set quarterly and yearly goals and have to go through them with my manager 🙈
⏺ I grew my social media/ influencer marketing management side gig on the side and even have a team member/assistant helping me 
⏺ Even though I failed in getting enough people to my Thailand Trova Trip (and I had to cancel it), it taught me a lot of hard lessons and gave me perspective (maybe one day I’ll try again but with Japan 🇯🇵) 
⏺ The interest rates and economy hit hard but financially I’ve been hustling HARD so I can afford to keep paying my mortgage LOL 

All in all, I’m just so happy that I survived another year of working for myself, and hopefully my business will continue to thrive in the years to come. 

💜THANK YOU THANK YOU💜 to all of you who continue to follow and support me even when times are tough (first half of the year is always super tough for me). And I don’t take any one of you for granted 🙏🏼

It was my first solo trip in a LONGGG time and gosh was it liberating! I was scared but I ended up taking the subway everywhere and visited all of these places by myself 😬

Honestly my biggest hurdle was eating by myself but luckily, I chose all the places that were very much grab-n-go places so I survived 🤣 #dontjudgeok

I also realized I forgot to add Times Square in the list even though obviously I did visit Times Square 🙈

1. Watch a Broadway Show (I didn’t get to go this trip 🥲)
2. Eat at @lostacos1 🌮
3. Visit Rockefeller Center (the tree wasn't up when I went) 🎄
4. Marvel at Grand Central Terminal (just WOW)
5. Eat NYC pizza at @joespizzanyc 🍕
6. Walk across the Brooklyn Bridge! It only took about 30 mins or so to walk across 
7. Eat a New York Style Bagel (I went to @libertybagelsny)
8. Spend Hours at Central Park

🦐 PERFECT CANTONESE STYLE SHRIMP AND EGGS 🦐 🦐 PERFECT CANTONESE STYLE SHRIMP AND EGGS 🦐

Save this one because you’ll want to whip this up any time you’re low on time! It’s my super easy Cantonese Style Shrimp & Eggs and I’ll be serving that on top of Tilda Steamed Jasmine Rice 🍚 #ad

🇭🇰 I ate this dish a lot growing up and every time I take a bite, it instantly transports me back to Hong Kong.

Tilda Steamed Jasmine Rice is my go-to when I am too lazy to cook rice from scratch and want it in 2 minutes 🤪

✨ ingredients
1 tbsp oil
1 Package of Tilda Steamed Jasmine Rice

[eggs]
- 3 eggs
- pinch of salt
- 1 tbsp chopped green onions or parsley (more for garnish)

[shrimp]
- 12 large shrimp
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/2 tsp sesame oil
- 1/2 tsp cooking wine

✨ instructions

Marinate thawed or fresh shrimp with salt, white pepper, sugar, sesame oil, and cooking wine. Mix together until combined.

Crack eggs into a large bowl and add in salt, and chopped green onions. Whisk until well combined.

In a non-stick skillet (smaller the better), heat 1/2 tbsp of oil on medium high heat. Add marinated shrimp and cook until it’s pink and 80% cooked. Remove from heat and put cooked shrimp into the egg mixture.

Wipe the non-stick skillet with a wet paper towel and wipe it clean (be careful not to touch the hot surface).

Return skillet back onto element and put 1 tbsp of oil. Turn heat to high and once pan is hot, pour in the egg and shrimp mixture. Immediately TURN OFF HEAT and let the residual heat cook the egg mixture.

Using a spatula, move the egg mixture from one side of the pan to the other allowing the egg mixture to create ‘folds’. If you notice the eggs have stopped bubbling on the edge, turn the heat up on high again and turn it off once it’s bubbling.

Keep creating these folds until your desired doneness and remember it will continue to cook with residual heat so it’s fine to stop it when it’s a bit runny.

Rip the top of Tilda Steamed Jasmine Rice and heat in the microwave for 2 minutes. Serve with Cantonese Style Shrimp & Eggs.

♠️ @ilovesugar and @candymartinibar! The Giant Martinis ($45 USD) with dry ice are so much fun and they are pretty strong! 💪 

♥️ @hellskitchen for their beef wellington and sticky toffee pudding - NEVER FAILS and honestly worth the money 💸

♣️ @eatalylasvegas is good but it is very pricey and just don’t get the prime rib panini 🙈 The il fritto is good 👍

♦️ @earlofsandwich inside Miracle Mile Shops is a MUST VISIT! We usually go 2-3 times every time we visit Vegas 😅

🃏Bacchanal Buffet inside @caesarspalace is also a must try! It’s one of my fav buffet in Vegas 🥰 

♥️ @dintaifungusa inside Aria was actually REALLY spacious, beautiful, and delish! Really good for your ‘day after’ drinking 😉
💥 Have you ever tried RICE PAPER POPS?!💥 Th 💥 Have you ever tried RICE PAPER POPS?!💥

This time it’s a ONE INGREDIENT Rice Paper Chip or Pop that can be made in the air fryer! It’s so crispy and I can’t believe rice paper in the air fryer can turn into chips 😱

I believe you can also make this in the microwave or oven but I personally haven’t tried it out myself 🤣

[ instructions ]

1. Dip your rice paper in a shallow bowl of room temperature water
2. Fold it in half and then cut it into a rectangle. Cut it further into strips, and then squares
3. Work quickly as they soften fast! Put the rice paper squares on the airfryer liner and bake for 4 minutes on 400F. You will hear them flying around but they won’t stick to the element on top. Put them in for longer if you want them even crispier. But for my specific air fryer, 4 minutes was perfect.
4. Spray rice paper pops with cooking spray and sprinkle furikake or other seasoning.
5. Make a few batches and enjoy!
