  • 1 cup rice
  • 1 tsp sesame oil
  • 1 tsp dashi powder
  • 1 3/4 cups water
  • 3 small tomatoes
  • 2 eggs, beaten

Instructions:

  1. Preparation: Combine rinsed rice, water, dashi powder, and sesame oil in your rice cooker or stove pot. Adjust water quantity for rice cooker usage to accommodate tomato moisture. Stir well to combine.
  2. Cooking: Layer tomatoes on top of the rice and start your rice cooker. If using a stove pot, bring the mixture to a boil, then reduce heat and simmer covered for 15-20 minutes until water is absorbed.
  3. Adding Eggs: When the rice cooker is 2 minutes away from completion, pour the beaten eggs over the rice and close the lid for an additional 2 minutes. For stove-top cooking, add eggs after the rice is done, cover, and cook for another 2 minutes.
  4. Serving: Mix the cooked ingredients thoroughly to evenly distribute the tomatoes and eggs. Serve with additional veggies for added nutrition and a splash of soy sauce or salt to taste!

Ingredients
  

  • 1 cup Rice
  • 1 tsp Sesame Oil
  • 1 tsp dashi powder
  • 1 3/4 cups water
  • 3 small tomatoes
  • 2 eggs beaten

Instructions
 

  • Prepare the Rice: In a rice cooker or stove pot, add in WASHED rice (wash and rinse twice until water runs clear) and water. If using a rice cooker, adjust the water slightly because tomatoes will release moisture. Add dashi powder and sesame oil, then stir.
  • Cook the Rice: Top the rice with tomatoes and start the rice cooker. If using a stove pot, bring the water to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes or until the water is absorbed.
  • Add the Eggs: When the rice cooker is 2 minutes away from being done, open the lid and add the beaten eggs. Close the lid and let it cook for an additional 2 minutes. If using a stove pot, add the eggs when the rice is done and cover for 2 more minutes.
  • Mix and Serve: Open the lid and mix thoroughly to distribute the tomato and cook the eggs further. Serve with additional veggies for a healthier meal and a splash of soy sauce or salt to taste!
