Ingredients for Scallion Oil Noodles:
- 1 bunch of scallions/green onions
- 1/4 of a white onion
- 1/4 to 1/3 cup of oil (I used avocado oil)
- 3 tbsp dark soy sauce
- 2 tbsp regular soy sauce
- 2 tsp sugar
- 1 tsp vinegar (black vinegar or rice wine vinegar will work)
- 4 bunches of noodles (thick wavy or thin ramen noodles are good)
- 1 tsp chili oil, optional
How to Make Scallion Oil Noodles:
- Cook the Noodles: In a small stove pot, boil water and add in your noodles. Undercook them slightly as they’ll continue to cook later with the sauce. Drain and set aside.
- Prepare the Vegetables: Cut scallions into 3 sections, then cut them lengthwise into thin strips. Cut the onion into thin strips.
- Fry the Scallions and Onions: In a large wok on medium heat, add in your oil. Once the oil is hot, add in the onion and the white part of the scallions. After 30 seconds to a minute, add in the rest of the scallion strips. Let them fry in the oil for 5 to 10 minutes, continuously stirring so they’re evenly fried. Remove the scallions and onions when they’re a beautiful golden brown and the oil smells aromatic. If the oil is bubbling or too hot, turn off the heat.
- Prepare the Sauce: Add in your dark soy sauce, regular soy sauce, sugar, and vinegar. Mix to combine and give it a taste. Adjust the seasoning to your personal preference.
- Combine and Serve: Turn the heat back on to medium, add in your noodles, and toss until well combined. Plate the noodles, and garnish with crispy scallions/onions and chili oil (optional)!
