Try this easy Shoyu Butter Corn Rice Cooker recipe! A one-pot meal with mushrooms, corn, and butter, perfect for a quick and delicious dinner. Follow these simple steps!

If you love corn, mushrooms, or butter, you’ll want to try my Shoyu Butter Corn Rice Cooker Recipe 🧈🌽🍚. It’s not only delicious but also a one-pot dish, which means minimal cleanup.

You will find this recipe perfect for busy weeknights, meal prep, or anyone craving a quick Japanese-inspired rice dish that tastes like it came straight from an izakaya.

While the dish looks simple, every single ingredient plays a role in building layers of umami, sweetness, and buttery richness. But let’s talk about the key ingredient.

Dashi Powder

Dashi adds pure umami, the savoury flavour found in Japanese soups and broths. It makes the rice taste restaurant‑quality with almost no effort. Dashi can be found in most Japanese specialty grocers or at T&T, if you are in Canada. See ingredient notes below for more information on substitutions.

Additionally, the dish is naturally kid-friendly. Great for introducing children to Japanese flavors without going too bold.

Here’s what you need for the recipe:

  • 2 cups rice
  • 2 cups water (for the rice)
  • 1 tsp dashi powder
  • 1 tsp soy sauce
  • 1 bunch oyster mushrooms, cut
  • 1 bunch enoki mushrooms, cut
  • 1 bunch shimeji mushrooms, cut
  • 1 cup corn (canned or frozen)
  • 1 tsp butter (or a small square)
  • Sprinkle of green onions
  • 1 tsp sesame oil (optional)

Step-by-step instructions:

Prepare the Rice

  1. Wash the Rice: In a rice cooker or stove pot, add the washed rice. Wash and rinse the rice twice until the water runs clear.
  2. Add Water: Add 2 cups of water to the rice.

Add Seasoning

  1. Dashi and Soy Sauce: Add 1 tsp of dashi powder and 1 tsp of soy sauce to the rice. Give it a quick stir to combine.

Add Vegetables

  1. Top with Mushrooms and Corn: Place the cut oyster, enoki, and shimeji mushrooms on top of the rice. Add 1 cup of corn.

Cook the Rice

  1. Rice Cooker Method: Turn on the rice cooker and let it cook until done.
  2. Stove Pot Method: Bring the mixture to a boil on medium-high heat. Once boiling, immediately cover, reduce heat to a simmer, and cook for 15-20 minutes or until all the water is absorbed. Turn off the heat and let it sit with the lid closed for another 5 minutes.

Finish and Serve

  1. Add Butter: Add 1 tsp of butter and mix to combine.
  2. Garnish: Sprinkle green onions on top and drizzle with 1 tsp of sesame oil if desired.

This Shoyu Butter Corn Rice is a flavorful, easy-to-make dish perfect for any meal. The combination of soy sauce, dashi, mushrooms, and corn creates a savory, umami-packed rice dish that’s sure to become a favorite!

Ingredient Notes

What type of rice works best?

Short‑grain Japanese rice (like Koshihikari or Calrose) gives the best texture.

Can I use frozen corn?

Yes! Frozen or canned corn both work perfectly.

Can I substitute the mushrooms?

Absolutely. Actually, shiitake, cremini, or maitake are great alternatives.

Is dashi necessary?

It adds depth, but you can substitute with chicken broth powder or mushroom powder.
