Not a fan of bitter melon? I’m about to share a secret. It might just change your perspective on this vegetable forever. Yes, I know it’s a love-it-or-hate-it kind of veggie. But hang on! Did you know that bitter melon comes with a treasure trove of health benefits? This veggie is truly a hidden gem. It features powerful antioxidants and blood sugar-regulating compounds. When cooked the right way, it becomes incredibly delicious.

This classic Okinawan stir-fry features bitter melon, tofu, egg, and a touch of bacon. I first heard about this dish when I was planning my Okinawan wedding. We didn’t end up having our wedding there because of “the thing that happened in 2020”. But still! This dish caught my eye. I’ve been making it at home ever since. If you’ve ever shied away from this dish due to its intense bitterness, fear not. I’ve got a nifty trick up my sleeve. It will make you a bitter melon believer!

  1. First salt the bitter melon slices: Sprinkle salt over the sliced bitter melon. Let it sit for 5–10 minutes.
  2. Then,rinse well! That’s it! This removes much of the bitterness. It keeps all the flavor and nutrients intact.

After this step, the bitterness becomes mild. In fact, it is balanced and never overwhelming!

Ingredients
  

  • 1 bitter melon
  • 1 tsp salt for removing bitterness (will be rinsed)
  • 2-3 slices bacon
  • 2 eggs
  • 454 g medium firm tofu (1 package) – I use Sunrise brand
  • 1/4 tsp ground black pepper
  • 1/4 cup dashi (fish stock) or chicken/vegetable broth
  • 1.5 tbsp soy sauce
  • Sprinkle bonito flakes thin dried skipjack tuna flakes (can be found at most Japanese supermarkets)

Equipment

  • 1 non-stick pan

Method
 

  1. First, cut the bitter melon in half lengthwise and remove all of the seeds with a spoon.
  2. Sprinkle on salt and wait about 5-10 minutes. Rinse the bitter melon well wth water and drain or pat down with paper towel to remove any excess moisture.
  3. Cut your bacon into thin strips.
  4. Beat your eggs in a small bowl and set aside.
  5. Remove your tofu from the package and gently pat down with a paper towel to remove all the moisture on the surface.
  6. In a large non-stick frying pan, add in your bacon. Stir fry until most of the oil has been released and bacon is golden brown. Remove bacon pieces and set aside.
  7. Gently rip tofu into medium to large pieces and cook them in the bacon fat until golden brown on all sides.
  8. Then, add in your bitter melon and toss with bacon for 30 seconds.
  9. Finally, make a well in the middle of the pan and add in your beaten eggs.
