I’m thrilled to introduce you to a delightful and easy-to-make treat: 3-Ingredient Mochi Waffles. Not only are these waffles incredibly tasty, but they also boast a healthy twist that will keep your taste buds and body happy. And if you’re not a waffle person? You can turn the same batter into mochi pancakes.
So, let’s dive right in and explore the magic of these fantastic mochi waffles and the reasons why I love them so much.
Why Mochi Waffles are the BEST
Mochi waffles have been gaining popularity for their unique texture and incredible taste. The secret behind their success lies in the addition of glutinous rice flour, also known as mochiko flour, which gives the waffles a chewy and slightly sticky texture, similar to traditional Japanese mochi. This texture adds an incredible twist to the standard waffle experience and makes every bite a memorable one!
Not only are these waffles a joy to eat, but they are also incredibly versatile. You can experiment with different toppings and sauces to suit your taste preferences. Today, I’ll be making my delicious mochi waffles with a hot berry compote that literally takes 1 minute to make with no pots or pans.
My Favourite Topping: 1‑Minute Hot Berry Compote
This is the easiest topping ever with no pots, no pans required. Just microwave:
1 cup frozen mixed berriesBlueberries, raspberries, strawberries — whatever you have works.

Add two eggs and glutinous rice flour and whisk together. In an oiled waffle pan, add the batter. The batter expands so make sure to allow for room in the waffle maker! To make pancakes instead, use a hot skillet. Take it out once the waffles are golden brown. In a small microwaveable bowl, microwave the berries in 30 second increments until hot. Usually takes about 1 min – 1 min 30 seconds. Add in maple syrup and chia seeds and mix well. Method
In a medium-sized bowl, mash the ripe banana with a fork until it's smooth and free of lumps. Add the two eggs and the glutinous rice flour to the bowl, and whisk all the ingredients together until you have a smooth batter.
Preheat your waffle maker and lightly oil it to prevent sticking. If you prefer pancakes, you can use a hot skillet instead.
Pour the batter into the waffle maker, making sure to leave some space for expansion. Close the waffle maker and allow the magic to happen. Once the waffles turn a beautiful golden brown, they are ready to be taken out.
For the berry compote, take a small microwaveable bowl and add the frozen berries to it. Microwave the berries in 30-second intervals until they become hot and slightly mushy. This usually takes about 1 to 1.5 minutes. Now, stir in the maple syrup or agave and chia seeds, mixing everything together to create a delightful berry compote.
To serve, place the mochi waffles on a plate, and generously spoon the warm berry compote over them. For an extra protein boost and creamy goodness, add a dollop of plain Greek yogurt on top. Finally, sprinkle some cocoa nibs over the waffles for that irresistible touch of chocolate and crunch.
With just a handful of ingredients, you can whip up this delightful treat for breakfast, brunch, or even a special dessert.
