Leftover egg whites can be stored in the refrigerator for about 3 to 4 days. To ensure they stay fresh and safe to use, it’s essential to store them properly. Here are some tips for storing leftover egg whites longer:

  1. Use Airtight Containers: Transfer the egg whites into an airtight container before placing them in the refrigerator. This helps prevent odors from other foods in the fridge from being absorbed and keeps the egg whites fresh.
  2. Label and Date: Always label the container with the number of egg whites and the date they were stored. This way, you can keep track of their freshness and avoid using them past their safe storage time.
  3. Avoid Temperature Fluctuations: Store the egg whites on a shelf in the main body of the refrigerator, not on the refrigerator door. The temperature on the door tends to fluctuate more, which can affect the quality of the egg whites.
  4. Freeze for Longer Storage: If you don’t plan to use the egg whites within 3 to 4 days, consider freezing them for longer storage. Transfer them into an ice cube tray or freezer-safe container, and make sure to label and date it. Frozen egg whites can be kept for up to 12 months.
  5. Thawing Frozen Egg Whites: When you’re ready to use frozen egg whites, thaw them in the refrigerator overnight or under cold running water. Avoid thawing at room temperature to prevent potential bacterial growth.
  6. Use Leftover Egg Whites Creatively: If you have a surplus of egg whites, get creative and find recipes that call for egg whites as their main ingredient, such as meringues, angel food cake, or this recipe!

Spinach and Egg White Rice Paper Wrap

Ingredients
  

  • 1 rice paper
  • 2 egg whites Leftover from Day 3 Recipe!
  • 1 cup spinach leaves wilt them in a skillet first with a tbsp of water
  • 1 sausage cut into slices
  • 1/2 block smoked tofu cut into strips or cubes
  • 0.5-1 tbsp chili oil use your favourite brand
  • 2 tbsp smashed avocado

Equipment

  • 1 non-stick skillet

Method
 

  1. Using a non-stick skillet, turn the heat to medium low and do not put oil on it!
  2. Place one sheet of rice paper on the pan and quickly spread your chili oil on all around.
  3. Add in your egg whites and spread it close to the edge, though keeping everything inside the rice paper (not spilling over the edge).
  4. Once the egg white is 50% set, spread your smashed avocado all around half of the egg white wrap
  5. Then add your other toppings (smoked tofu, sausages, wilted spinach) all on the same half and fold it over like an omelette.
  6. Turn off the heat and set aside on a plate.
  7. Once the rice paper wrap has cooled for 1-2 minutes, fold it again into a quarter and enjoy!
