  • 1 cup Rice
  • 1 tsp Sesame Oil
  • 1 tsp dashi powder
  • 1 3/4 cups water
  • 3 small tomatoes
  • 2 eggs beaten

Method
 

  1. Prepare the Rice: In a rice cooker or stove pot, add in WASHED rice (wash and rinse twice until water runs clear) and water. If using a rice cooker, adjust the water slightly because tomatoes will release moisture. Add dashi powder and sesame oil, then stir.
  2. Cook the Rice: Top the rice with tomatoes and start the rice cooker. If using a stove pot, bring the water to a boil, then reduce to a simmer, cover, and cook for 15-20 minutes or until the water is absorbed.
  3. Add the Eggs: When the rice cooker is 2 minutes away from being done, open the lid and add the beaten eggs. Close the lid and let it cook for an additional 2 minutes. If using a stove pot, add the eggs when the rice is done and cover for 2 more minutes.
  4. Mix and Serve: Open the lid and mix thoroughly to distribute the tomato and cook the eggs further. Serve with additional veggies for a healthier meal and a splash of soy sauce or salt to taste!

Top the rice with tomatoes and start the rice cooker. If using a stove pot, turn the heat to medium and once the water starts bubbling and boiling, reduce to a simmer and cover with lid. Cook for 15- 20 minutes or until water is completely absorbed. Once the rice cooker is 2 minutes away from being done, open the lid and add in your beaten eggs. Close the lid and let it cook for an additional 2 minutes. Same process goes with the stove pot. Once rice is done, add in your beaten eggs and cover the lid for an additional 2 minutes. Open the lid and mix thoroughly to cook the eggs even more and distribute the tomato throughout the rice.
