I first heard about this when I was planning my Okinawan wedding. We didn’t end up having our wedding in Okinawa, but this dish caught my eye and I’ve been making it at home ever since! If you’ve ever shied away from this green gem due to its intense bitterness, fear not! I’ve got a nifty trick up my sleeve that will make you a bitter melon believer.

Goya Champuru (Favorite Bitter Melon Recipe)

This dish will make convert you into a bitter melon lover! It's healthy, flavourful, and a perfect light dinner meal idea.

Cook Time 10 minutes

Equipment

  • 1 non-stick pan or Always Pan 2.0 from Our Place

Ingredients
  

  • 1 bitter melon
  • 1 tsp salt for removing bitterness (will be rinsed)
  • 2-3 slices bacon
  • 2 eggs
  • 454 g medium firm tofu (1 package) - I use Sunrise brand
  • 1/4 tsp ground black pepper
  • 1/4 cup dashi (fish stock) or chicken/vegetable broth
  • 1.5 tbsp soy sauce
  • Sprinkle bonito flakes thin dried skipjack tuna flakes (can be found at most Japanese supermarkets)

Instructions
 

  • Cut the bitter melon in half lengthwise and remove all of the seeds with a spoon.
  • Sprinkle on salt and wait about 5-10 minutes. Rinse the bitter melon well wth water and drain or pat down with paper towel to remove any excess moisture.
  • Cut your bacon into thin strips.
  • Beat your eggs in a small bowl and set aside.
  • Remove your tofu from the package and gently pat down with a paper towel to remove all the moisture on the surface.
  • In a large non-stick frying pan, add in your bacon. Stir fry until most of the oil has been released and bacon is golden brown. Remove bacon pieces and set aside.
  • Gently rip tofu into medium to large pieces and cook them in the bacon fat until golden brown on all sides.
  • Add in your bitter melon and toss with bacon for 30 seconds.
  • Make a well in the middle of the pan and add in your beaten eggs.
