Lazy One Pot Japchae (Korean Glass Noodles)

This is a simple, healthy, and delicious Korean glass noodle stir fry that requires minimal effort and leaves you with just one pot to clean!

The classic Korean glass noodles is one of my favorite weekday dinner meals. But unlike the traditional way of making this, this is a lazy one-pot method. Because who wants to spend time cleaning more than one pot? This classic stir-fry also known as Japchae, is a delightful medley of chewy sweet potato noodles, colorful veggies, and a delicious blend of savoury and sweet sauces. The best thing about this recipe is that you can keep it purely vegan by only using vegetables. Alternatively, you can make it vegetarian by adding in smoked tofu or eggs or make it the traditional way with little slices of meat (usually beef).

Before we get started, I also want to share a little more info on Korean glass noodles, which is the star of this dish, and its health benefits. It’s such a great alternative to wheat pastas and noodles especially if you have a gluten intolerance or just want a lower calorie version. You can get it easily at T&T and other Asian grocery stores, if you live in Vancouver.

Health Benefits of Korean Glass Noodles

  • Low Fat Content: Glass noodles have a low fat content, making them a suitable choice for those looking to reduce their fat intake

  • Gentle on Digestion: Sweet potato noodles are easy to digest, making them a good choice for those with sensitive digestive systems

Why One Pot?

Usually making Japchae involves a lot of bowls, and different pots and pans to cook the noodles versus vegetables. It probably tastes better than way but I’m all for ease and convenience. Below are other reasons why you might want to choose this lazy one-pot version over the others.

Lazy One-Pot Japchae (Korean Glass Noodles)

This is a simple, healthy, and delicious Korean glass noodle stir fry that requires minimal effort and leaves you with just one pot to clean!

Ingredients
  

  • 4 oz Korean sweet potato noodles
  • 1/4 onion thin slices
  • 1 cup carrots, shredded or julienned
  • 1 cup sweet bell peppers thin slices
  • Handful spinach
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp oyster sauce
  • 2 tbsp sugar

Equipment

  • 1 large pot

Method
 

  1. In a large pot, fill it up with tap water until half full.
  2. Over medium high heat, wait until the water begins to boil and add in your Korean glass noodles.
  3. Cook for roughly 3 minutes or until the noodles are softer but still quite firm (too firm to eat with a dense center)
  4. Add in your sweet bell peppers, carrots, and onions. Cook for 1-2 minutes.
  5. Add in your spinach and cook for 30 seconds. Turn off the heat and put the lid on. Wait for another 1-2 minutes and then drain.
  6. Put the pot on a heating pad and do NOT apply more heat to it or put it back on the burner. The residual heat will cook and fuse all the seasonings together.
  7. Add in your soy sauce, sugar, sesame oil, and oyster sauce. Give it a good mix and using scissors, make a few cuts to the noodles so they're easier to separate. Add optional sesame seeds.
  8. Give it a taste and adjust seasoning to your preference. Serve and enjoy!
